Clean mushrooms quickly and dry

A tip on how to clean mushrooms fast and dry.

That's how it's done:

Mushrooms should not be washed if possible. Can the Huthaut - like the champignon remove - down with it. Ideally, take medium-sized mushrooms - this is easiest - and cut off the stem just below the hat.

I usually throw the stalk away, but you can also scrape it off and cut it to size. Then I go with a small knife between the stem and the edge of the hat and pull the skin down to the center of the hat. Goes easy, best with the brown mushrooms. If there is still a stick left in the center of the hat - the skin is very thin there - I scrap the blade a bit more.

By the way: I prefer mushrooms of about 3-4 cm hat diameter. I then cut it across into slices of just under 1 cm. It takes 1-2 minutes in hot butter. As soon as it smells, I'll take it off the stove. Then they are still pretty crisp.
