Colorful potato and vegetable pan

This recipe comes from my hodgepodge, originally from my mother.

ingredients

  • 500 g potatoes
  • 2 onions
  • 1 red and 1 green or yellow pepper
  • 1 tbsp butter lard
  • 1 tbsp mustard
  • Salt, pepper, paprika
  • 200 g meat sausage
  • 200 g of sauerkraut
  • 100 ml vegetable stock or chicken broth
  • Chives or other herbs

preparation

  1. Cook the potatoes for 20 minutes as usual or use boiled potatoes from the previous day. Then the preparation time is reduced by 20 minutes.
  2. Slice the potatoes, remove the onions, halve the peppers, remove seeds and cut into thin strips.
  3. Cut the sausage into 1 cm thick strips.
  4. Fry the potato slices in hot clarified butter, add onions and paprika, season with mustard, salt, pepper and paprika. Continue roasting for 2-3 minutes.
  5. Bring the sausage with the sauerkraut together under the potato-paprika-onion mixture, add the broth, cover it stewed for about 20 minutes (I had only 10 minutes) and turn it over, sprinkle with chives or other herbs.

Preparation time approx. 45 - 60 minutes.
