Fine sauce from packet of finished sauce

Some time ago, I had the pleasure of making a sauce from a packet of instant sauce that tasted almost as good as homemade.
I used to buy packets every now and then, but when I roasted meat, I preferred to make my own sauce, d. H. the finished things had to go. Besides, I do not want to eat meat that often.
ingredients
The amount varies, depending on how many packets you take. I usually make of 4 packages, so that the effort is worthwhile:
- 4 sachets of Maggi sauce for frying (before pouring into small bowl, everything goes out completely) à 1/4 L each
- 1 onion
- a little fat
- 1 good splash of tomato paste (2 - 3 cm)
- 1 - 2 garlic cloves (flattened with a knife)
- 1 - 2 bay leaves
- 2 - 3 allspice grains
- 1 - 2 cloves
- 1 dried chili pepper
- 1 - 2 teaspoons thyme
- good pinch of nutmeg
- Pepper salt
- 100 - 200 ml of good Riesling
- 1 teaspoon cognac
- MAGGI
- Possibly. a dash of cream
Side dish: mini dumplings or gnocchi, lamb's lettuce or red cabbage
preparation
- Finely dice the onion and fry in a little fat, may already be medium brown, because of the roasting. Then tomato paste with roast.
- Pour in water, boil as directed and add the sauce powder. Boil briefly, then downshift, so that the sauce only simmert.
- Ingredients from garlic to chile in a seasoning egg and to the sauce.
- Add white wine and MAGGI. Depending on your taste.
- I am careful and try more often.
- If you like, add a teaspoon of cognac.
- If I still have cracked cream in the fridge, I make another shot.
- Season with thyme and nutmeg. Season with pepper and salt.
- Simmer the whole, grade 3 or 4, until the sauce has absorbed the flavors. Depending on 30 - 60 minutes. Possibly. always add liquid. Possibly. to taste again.
- In the meantime prepare the mini-dumplings (preferably potatoes or half and half) or the gnocchi.
- I like to bake the gnocchi after cooking a bit light brown.
It goes well with lamb's lettuce or red cabbage, depending on the season.
