Hearty sauerkraut and paprika soup

This soup is quick and easy to cook and is healthy and quite low in calories, since sauerkraut is just 19 kcal / 100 g and practically fat free, and contains vitamin A, B, K and a lot of vitamin C.

Ingredients for 3 to 4 servings

  • 2 onions
  • 1-2 cloves of garlic
  • 2 peppers (eg yellow and red)
  • about 40 g of butter lard
  • 500 g of sauerkraut
  • 3 tablespoons ketchup
  • 3 tablespoons tomato paste
  • 500 g potatoes
  • 1 L vegetable stock
  • a little sugar, salt and pepper
  • Caraway, Marjoram, Paprika Chilli Spice
  • about 400 g of Vienna sausages
  • 200 ml sour cream
  • Parsley or chives

preparation

  1. Peel the onions and cut into small cubes, mince the garlic cloves, peel and dice the potatoes.
  2. Heat the clarified butter in a large pot, sauté the onion cubes and finely chopped garlic cloves. Add the cleaned and cut into small pieces of peppers, sauté briefly, then stir in ketchup and tomato paste and sauté.
  3. Now add the sauerkraut and heat everything for about 5 minutes.
  4. Then deglaze with the vegetable broth, add the potato cubes and season the whole thing to taste with a little sugar, salt, pepper, cumin, marjoram and paprika-chilli spice, bring to a boil and simmer for about 30 minutes at moderate heat.
  5. Then add the cut into small pieces of Vienna sausages and heat with.
  6. Finally, stir in 150 ml of the sour cream.
  7. Serve the finished soup with a dollop of sour cream and sprinkled with parsley or chives.
