Ideas for rice remnants (medium to large quantities)

Rice remnants can be stretched easily? if they are not quite enough for a complete meal. Here are a few variants:

Simple vegetable rice: Cut carrots and onions into small cubes and sauté. Add a little water or broth in small quantities to make everything beautiful. Some garlic, spices (grated Ingwar goes great!) And a few frozen peas. If the vegetables are cooked, just mix in the rice. Fresh parsley over it. Goes well with fish or poultry dishes.

Potato rice: Cut the potatoes and onions into small cubes and sauté in butter or olive oil. Season to taste (I think caraway fits for example very nice). Goes well with dishes with red meat or mushrooms.


Kushari (Egyptian Lentil Rice): Here about the same amount of green or brown lentils and the same amount of pasta (penne fits best, spaghetti not at all) like rice, boil (separately). The noodles as always, the lentils best in broth, double the amount as the lenses on medium heat, covered. Mix all three components. On top comes a kind of sauce consisting of canned tomatoes, a dash of balsamic vinegar and spices (bouillon cubes, cumin, coriander, garlic, paprika, pepper and a small bit of clove). This dish is best served with steaming rice.

Rice snack: For the small hunger something fast. Tuna from the tin, a small onion to cut (spring onion, shallot or just the small brown) a shot of soy sauce and balsamic vinegar.
