Juicy pineapple cake

- 1 tin (580 g) pineapple in pieces
- 200 g of butter or margarine
- 175 g of sugar
- 1 pck of vanilla sugar
- 4 eggs
- 1 untreated lemon
- 250 g flour
- 50 g cornstarch
- 1 pck of baking soda
- 200 g of powdered sugar
preparation
- Drain the pineapple on a sieve and collect the juice.
- Beat the fat, sugar and vanilla sugar with the whisk of a hand mixer until frothy.
- Gradually stir in the eggs, wash the lemon hot, dry and rub the peel into the dough.
- Mix flour, cornflour and baking powder, add and mix everything to a smooth creamy dough.
- Carefully fold in pieces of pineapple, leaving some to decorate.
- Grease a box mold (30 cm in length) and fill in the dough.
- In the preheated oven electric stove: 175 degrees, gas stove: stage 2 bake for about 60 minutes.
- After baking for 10 minutes, cut the dough in the middle so that it tears evenly.
- Allow the cake to cool in the mold, then place it on a wire rack.
- Powdered sugar, 4 tablespoons of pineapple juice and 1 tablespoon of oil. Cover the still warm cake and decorate with the pineapple pieces.
