Juicy pineapple cake

ingredients

  • 1 tin (580 g) pineapple in pieces
  • 200 g of butter or margarine
  • 175 g of sugar
  • 1 pck of vanilla sugar
  • 4 eggs
  • 1 untreated lemon
  • 250 g flour
  • 50 g cornstarch
  • 1 pck of baking soda
  • 200 g of powdered sugar

preparation

  1. Drain the pineapple on a sieve and collect the juice.
  2. Beat the fat, sugar and vanilla sugar with the whisk of a hand mixer until frothy.
  3. Gradually stir in the eggs, wash the lemon hot, dry and rub the peel into the dough.
  4. Mix flour, cornflour and baking powder, add and mix everything to a smooth creamy dough.
  5. Carefully fold in pieces of pineapple, leaving some to decorate.
  6. Grease a box mold (30 cm in length) and fill in the dough.
  7. In the preheated oven electric stove: 175 degrees, gas stove: stage 2 bake for about 60 minutes.
  8. After baking for 10 minutes, cut the dough in the middle so that it tears evenly.
  9. Allow the cake to cool in the mold, then place it on a wire rack.
  10. Powdered sugar, 4 tablespoons of pineapple juice and 1 tablespoon of oil. Cover the still warm cake and decorate with the pineapple pieces.
