Kaiserschmarrn - vegan

I love this recipe for vegan Kaiserschmarrn and would therefore like to share it with you! You can customize it to your liking and it is super changeable and totally easy and fast made.

Ingredients for 2 persons:

  • 1 cup wholemeal spelled flour
  • 1.5 teaspoon baking powder
  • 1 tbsp raw cane sugar (I use agave syrup)
  • 1/2 pinch of salt
  • a little vanilla pulp
  • 1 cup of vegetable milk
  • some coconut oil for the pan (of course it works with any oil, but I prefer to roast it with it)
  • optional: raisins, compote, etc.

preparation

  1. Mix all dry ingredients together, add the milk and stir until a smooth dough is formed (I use a whisk for this).
  2. Heat the coconut oil in a pan and finally add the dough.
  3. Turn after a few minutes like a pancake and roast from the other side also a few minutes.
  4. Then use a fork to break the "pancake" into bite-sized pieces.
  5. I cut a banana into pieces and doused it with a little agave syrup, then had it caramelized briefly in the pan and lifted under the Kaiserschmarrn.
  6. I then prepared the finished Kaiserschmarrn with strawberries.
