Raffaello muffins

These Raffaello muffins will be nice and juicy. Even after a few days, they still taste fresh and do not dry so quickly.
ingredients
dough
- 300 g of flour
- 45 g of ground almonds
- 150 g of sugar
- 1 pck of vanilla sugar
- 1 pck of baking soda
- 100 g of butter
- 2 eggs
- 90 ml of coconut milk
cream
- 200 g cream cheese
- 200 ml of cream
- 150 g white chocolate
Furthermore
- 1 large pack of Raffaello
preparation
- Beat butter, eggs, vanilla sugar and sugar until foamy. Then add the coconut milk.
- Mix the flour, baking powder and almonds and add to the egg mass.
- Fill the muffin cups halfway with the dough, then squeeze a raffaello into each tray and cover with dough.
- Bake the muffins at 170 degrees top / bottom heat for about 20 - 25 minutes.
- For the cream, melt the chocolate in a water bath and allow to cool slightly. Mix well with cream cheese and let rest for 30 minutes.
- Then the stiff whipped cream can be lifted.
- Decorate the muffins with the cream and finish with a Raffaello on top or sprinkle with coconut flakes.
