Rhubarb Streusel Cake

Total preparation time: 1 hr. 30 min.

For a springform of about 24 cm in diameter:

  1. Stir 75 g of butter gently in a bowl.
  2. Add 175 g of raw sugar, 1 pinch of salt, 3 eggs and the grated peel to an untreated lemon, stir until the mixture becomes lighter.
  3. Stir 10 ml of cream under it.
  4. Mix 150 g of ground almonds, 200 g of flour and 1 teaspoon of baking powder in a bowl.
  5. Mix 550 g of rhubarb, mix well with the egg mass, fill in the prepared mold, smooth.
  6. For the sprinkles: Mix 2 tablespoons flour, 2 tablespoons sugar, 3 tablespoons ground almonds and 25 grams of soft butter in a bowl with a fork until the mixture is crumbly, spread on the rhubarb paste.
  7. Baking: approx. 60 minutes to 180 degrees.
  8. Dust with powdered sugar.
