Vegetable soup for singles and cook beginners

Do you always have too many vegetables for a good soup as a single?

Here is a tip for about 2 people / portions.

preparation

  1. Buy pre-packaged greens (Aldi or Lidl have it in just the right amount in a bowl), which are carrots, celeriac, leek and parsley.
  2. To make it really full, add 1 - 2 potatoes (or more). You can also add cauliflower florets or kohlrabi or, if you have a shriveled tomato, add to it. (Cut the tomato crosswise at the top, pour boiling water over it, after about 2 minutes you can fish it out of the water and remove the skin wonderfully.)
  3. Wash all the vegetables and the potatoes (especially the leek!), Peel and cut into 1 cm cubes or slices. (Picture 1 is the raw vegetables, picture 2 is the vegetables for vegetarians).
  4. Non-vegetarians cut one pair Wienerle into slices per person (3rd picture). I always slice it so you do not have to mess around with a knife and fork. Freely after the Swabian sentence: "With the fork it's a honor, with the spoon gets more." If no Wienerle (= Wiener, Frankfurter) are on hand, you can also dice salami (very fine and cut small) purely.
  5. Now the raw vegetables come in a pot, some salt to taste, Maggi and so much cold water that everything is well covered. (See picture 2) Ideal if guests come, then you can do anything with more vegetables. Can be prepared well.
  6. Cook everything (boil first, then simmer gently), about 15 - 20 minutes.
  7. Chopped parsley over it (do not cook it!) You do that only if you only want the broth.) And then yummy yummy yummy good appetite.
