Salmon and peas in lemon butter

I have not been registered with FM for a long time and would like to set my first tip today. I love fast, uncomplicated dishes, with good ingredients. This tastes very good, is light and you do not have to stand for hours in the heat at the stove. I hope it tastes just as good as us to those who like fish. :)


ingredients

For 4 people:

  • 700 g salmon fillet
  • 450 g peas fresh or frozen
  • butter
  • Lemon juice 1-2 tbsp
  • 250 ml vegetable stock or fish stock
  • 1 tsp. Sweet Sweet Pepper, salt, pepper
  • 2 tablespoons flour or 3 tablespoons sauce binder

preparation

I cut the salmon into bite sized, not too small pieces, so that it does not break down when searing. The salmon fillet is mixed with salt, pepper and paprika and sautéed on low heat, in portions, in butter. I take a coated pan and just a little butter. The number of grams, however, I can not name exactly, because I measure by eye. Salmon has a lot of its own fat and the coated pan does the rest, so rather start with less. One can still admit.

When the salmon is seared all over, I sprinkle it with lemon juice, add the peas and broth and let it simmer for 10 -15 minutes. For TK peas, please check if there is enough time and they are soft. Finally, the sauce can be thickened with flour / light sauce binder and seasoned. We eat basmati rice. Good Appetite!

Of course you can work with the ingredients to taste and take more or less of everything. The vegetables can certainly be replaced by other, if you z. B. Peas do not like. Butter burns easily, so please only fry on low heat. It also gives the dish extra flavor.
