Spring vegetable stew - very light and tasty
You need:
- about 2-3 liters of strong vegetable or meat broth (for example chicken, beef), homemade or instant
- 1 small kohlrabi
- 1 large fennel tuber
- 1 bunch of celery
- 2 red peppers
- 1 bunch of spring onions
Bring the broth to a boil, in the meantime wash / clean the vegetables and cut into bite-sized pieces or slices / rings (all vegetables should be cut then about the same size or thickness).
Add the vegetables slowly one after the other in the above order (important because of different cooking times, which takes a long time, come in first) into the boiling broth and let it simmer for 20-30 minutes over low heat (time variable, I would like to crisp , so just try it in between and check your own bite resistance).
If you like, you can also add chicken breast or fish fillet in pieces to the soup and, with the lid closed and a little bit of heat, let it cook for the last 10-15 minutes, maybe add some rice (maybe also cooked). finished is a meal that is healthy and low in calories, full and delicious taste :-)
PS: Alternatively, of course, go other vegetables such as broccoli, cauliflower, carrots, celeriac, white cabbage, beetroot, zucchini, etc.? just try :-)
