The secret of a good tomato sauce
The tomato sauce in a good Italian tastes somehow still different, as a lovingly prepared tomato sauce from fresh ingredients at home.
First, of course, the ripe, sweet tomatoes that are used in Italy. Sometimes the sauce is cooked there for a very long time, caramelizing the sugar in the sauce.
Simply adding sugar does not work. But if you let a little cane sugar (about a tablespoon) caramelize before you put the tomatoes in the pot, you get a similar result.
