Real tomato sauce a la mom

  • 1 onion, garlic
  • Peeled tomatoes (1 kg for 4 persons)
  • olive oil
  • Salt, pepper, sugar, basil

Before you start, the peeled tomatoes are chased by the fleet Lotte. If you do not have one, you can shred it with a blender, but, really, even the Italian housewife does that. By crushing the sauce is creamier and the aroma of the tomatoes is even better.

Chop onions and garlic and sauté in oil. Add the tomatoes and bring to a boil briefly. Salt, pepper and sugar. This has to simmer for a while, the sauce has to thicken nicely. The fresh basil leaves are added rather late, so that the aroma is better preserved.

My mother-in-law cooks the sauce in the morning, which is eaten at noon. A good sauce takes time.
