After being very disappointed in ready-made and frozen pizza dough, I started making pizza myself. But I also tried a lot and am now, after years of experience with this recipe here completely satisfied.

Ingredients for pizza dough on a plate

  • 400 g of flour
  • 1/2 cube fresh yeast (or 1 pck dry yeast)
  • 200 ml of lukewarm water
  • 1 pinch of sugar
  • 1 tsp salt
  • 4 tablespoons olive oil

preparation

  1. First close all windows, yeast does not tolerate drafts. The ingredients should have all room temperature, the water lukewarm, definitely not too hot. A pre-dough is not necessary.
  2. Crumble the yeast in the lukewarm water and dissolve with a little sugar (which promotes the fermentation process) by stirring with a fork.
  3. In a large plastic bowl, weigh the flour and add the salt and olive oil as close to the edge as possible.
  4. Now place the dough hook in the center of the flour as much as possible, slowly pour the liquid yeast into the middle and set the dough hook in motion.
  5. Now the dough is kneaded well from the middle to the edge with the dough hook until it is very soft and tough. If you like, you can also use your hands.
  6. The dough remains in the mixing bowl first, is covered with a towel and must now go in a warm place 30-45 minutes.
  7. I myself have a "fermentation" with my stove, which I like to use for it. When it has risen then (in the time can be prepared the lining ever), it is rolled out on a large piece of baking paper, the plate should now be in the lower third of the furnace at the highest stage (250 ° C, upper + lower heat) preheated - whoever has it, can also take a brick instead of sheet metal.
  8. Spread a small amount of olive oil on the rolled dough, the size of the sheet, then place as desired.
  9. I like to skim thin tomato paste on it myself, then mushrooms, spinach, salami (or other delicacies) and finally grated cheese / mozzarella on it.
  10. If the oven is hot enough, use the baking paper to lift the pizza onto the plate, insert it, close the oven and wait.
  11. After about 15 minutes, the cheese turns golden yellow and blisters, which is the sign that the pizza is ready!

My extremely critical family of 4 has gone through all the dough variations with me, together we decided that this is the very best dough. Of course, the effort is only worthwhile for those who appreciate it.
