Tomato Cheese Fondue

Tomato and cheese fondue for the whole family without alcohol.

ingredients

  • 1 heaped tbsp butter
  • 1 tbsp flour
  • 1/2 tube of tomato paste
  • 0.5 L vegetable stock
  • 1 large onion, grated
  • 600 g of medieval Gouda (do not take a boy, he pulls threads like in Asterix with the Swiss!), Grated or finely chopped
  • 1 cup of cream
  • 1 can of tomatoes (if you want to take fresh, you have to skin them, but from the can they taste more aromatic and you can save the work), very finely diced
  • 1/2 bunch of parsley, finely chopped
  • 1 garlic clove, pressed
  • Salt, pepper, rosemary

preparation

  1. The flour is sweated in the butter and quenched with boiling broth.
  2. Dissolve the tomato paste while stirring and add to the grated or cut cheese.
  3. Then you have to stir, stir, stir, until everything has dissolved and take care that nothing burns.
  4. Then add all the remaining ingredients, season with the spices and cook with stirring for 5 minutes - done.
  5. This is best served with rye mixed bread and lamb's lettuce.

We were not big cheese fans as kids, but we loved the fondue.

Possibly. Remains can also be eaten very well as pasta sauce or potatoes.
