What to do with the many zucchinis and redcurrants that are now ripe in the garden?


I have modified the recipe of a walnut-courgette cake without fruit as follows and am very satisfied with the result.

Here is my recipe:

For the dough:

  • 6 eggs
  • 400 g of sugar
  • 3 packets of Bourbon vanilla sugar
  • 1 1/2 coated teaspoon salt
  • 3 teaspoons cinnamon
  • 300 g of tender oatmeal
  • 400 g of flour
  • 1 packet of baking soda
  • 350 ml of oil
  • 400 g of zucchini
  • 400 g redcurrants

preparation

  1. Beat the eggs, sugar, vanilla sugar, cinnamon and salt with the mixer for about 5 minutes until creamy, then add the oil in a thin stream.
  2. Mix the flour with the baking powder and place on the egg yolk. Also add the oatmeal and stir in with a large wooden spoon.
  3. Thoroughly wash the zucchini and grate with the shell, squeeze well and stir in the batter.
  4. Finally, wash the washed, stemmed redcurrants underneath.
  5. Line the fat pan or a high-edge baking tray with baking paper, spread the dough on it and bake at 180 degrees for about 45 minutes.
  6. After baking, allow the cake to cool and mix with icing sugar.

You can eat whipped cream for this cake, but you do not have to.

P.S. In the photo is missing a piece, but I had to try in advance, if my idea has become something, because I have indeed replaced the walnut whole amount by oatmeal and added more fruits.
