Colorful bean and avocado mix

This salad mixture makes you full, looks really appetizing and is super healthy. It can be eaten as a side salad, stuffed into tacos and wraps. It tastes delicious on a baked baked potato and as a dip to corn or bread chips. And of course as a sandwich filling in roasted bread rolls!

You need:

1 can of red beans
1 can chickpeas
1 can of small black beans


250 g cherry tomatoes
1 red onion
1 bunch of chives
2 ripe avocados

For the dressing:

Juice of two limes
3 tbsp olive oil
Pepper, salt, chilli powder, a pinch of sugar


That is how it goes:

Open the cans, place the beans in a colander and rinse well and pat dry. Wash the tomatoes, cut into cubes, cut the red onion into small cubes, wash the chives, cut into small rolls.

Mix these ingredients in a large bowl with the combined dressing.

Peel the avocados just before serving, cut into small cubes and add. It looks more beautiful, the color stays bright green! Carefully fold.
