Crunchy tomato ribs
This recipe of crispy tomato ribs is hearty and tasty. You need two fat pigs per person.
They are massaged with a spice mixture and doused with a fruity tomato sauce. They are stewed in the oven for one and a half hours, then they are brown and crispy.
Ingredients:
thick pork ribs, sawed apart, 2 pieces per person
Spice mixture from:
2 teaspoons salt
2 tsp paprika
1 tsp curry
1 tsp dried herbs of the province
1 teaspoon chilli powder
For the sauce:
1 L tomato juice
2 small cut shallots
2 tbsp brown sugar
2 tablespoons oil
1 tsp salt
All this is boiled together
While roasting, coat the meat more often with the sauce. Very good with white bread and salad and a few olives.
