Ginger jelly & ginger syrup

  1. Peel and chop the ginger. I do that with my food processor, but it works with a knife.
  2. Then sprinkle sugar over the minced ginger and simmer until syrup is formed.
  3. Strain the syrup, place in a saucepan and bring to a boil with light grape juice, gelling agent, possibly sugar, according to taste. The quantity you take please the hints of the gelling agent.
  4. While still hot fill in screw jars and place on the lid. This golden yellow jelly tastes wonderful!
  5. The ginger syrup can also be filled in a clean bottle and used to flavor salad dressing, tea, biscuits or food.
  6. Because the sugar content is very high, the syrup does not spoil when stored in the refrigerator.
