Ginger jelly & ginger syrup

- Peel and chop the ginger. I do that with my food processor, but it works with a knife.
- Then sprinkle sugar over the minced ginger and simmer until syrup is formed.
- Strain the syrup, place in a saucepan and bring to a boil with light grape juice, gelling agent, possibly sugar, according to taste. The quantity you take please the hints of the gelling agent.
- While still hot fill in screw jars and place on the lid. This golden yellow jelly tastes wonderful!
- The ginger syrup can also be filled in a clean bottle and used to flavor salad dressing, tea, biscuits or food.
- Because the sugar content is very high, the syrup does not spoil when stored in the refrigerator.
