Low-fat and low-calorie lemon cake

I did my own work and created this recipe for a low-fat and low-calorie lemon cake.

ingredients

  • 115 g of semi-fat margarine
  • 115 ml of oil
  • 100 g of ground sweetener (eg xylitol)
  • 1 pck vanillin sugar
  • 4 eggs
  • 230 g Skyr 0.2% fat
  • 3 fresh lemons
  • 115 g of flour
  • 115 g potato flour
  • 1 pck of baking soda
  • Powdered sugar or sweetener for dusting

preparation

  1. Preheat the oven to 170 ° above and below heat.
  2. Then you put the Halbfettmargarine and the oil in a bowl and stir the whole with xylitol and vanilla sugar to a creamy mass.
  3. Then you separate the eggs and give the yolks to the margarine-oil mixture and the egg whites are beaten stiff.
  4. Now you wash the lemons, rub the shell off one of them, squeeze it out and add everything to the margarine-oil mixture.
  5. Then stir in the skyr and mix the flour with the potato flour and the baking powder.
  6. Now sieve the flour mixture into the dough and stir until no lumps are left. Now the stiff whipped egg white is carefully lifted.
  7. Then you grease a springform with butter and sprinkle some semolina on it (so nothing sticks in the mold after baking guaranteed).
  8. Now you just fill the dough in the mold and push it on the middle rail in the hot oven.
  9. After about 40-45 minutes, the cake is baked golden yellow and you can take it out after a chopstick sample.
  10. Then you give it with the form on a wire rack and let it cool well.
  11. After cooling, remove the mold and dust the cake with powdered sugar or sweetener.

Actually, as you may know, I have an aversion to xylitol, but since WW I have been using this one or the other time. Maybe you can take liquid sweetener instead. (I'll try that next time).
