My favorite soup - "Bibbelsches Bohnesupp" (Saarland)

Recipe for "Bibbelsches Bohnesupp" - that's what it's called here in Saarland.

ingredients for 4 persons

  • 500 g of rod or bush beans
  • 5 medium potatoes
  • 400 g of bacon
  • savory
  • 1.5 tsp granulated broth

preparation

  1. Peel potatoes and cut into cubes.
  2. Cut beans into pieces about 1.5 cm in size.
  3. Put both in a sieve and wash.
  4. Put a pot of 1.5 L of cold water on and add the bacon, bring to a boil and simmer for about 30 minutes over low heat. Add a heaped teaspoon of savory (rubbed) and add 1.5 teaspoons of granulated broth towards the end.
  5. After the 30 minutes, add the washed potatoes and beans. Boil and simmer for another 30 minutes. Do not salt, as the bacon already contains enough salt.
  6. Remove bacon from the pot, cut rind and cut into small pieces.
  7. Pour the bacon into the plates and fill with the soup. As a Saarlander, I add a dash of whipped cream to my soup. Then the soup is perfect for me.

Please do not criticize the picture too much, it is a reminder of my son, who likes to eat the soup for his life and painted it as a child.
