Far Eastern cold soup - also for healthy!

Inspired by pug, I've been digging ...

This chicken soup is magical for me not only because of its healing power, but also because of its good taste and its diverse flavors.

1 soup chicken, about 1200 g - 1800 g.


in cold water with

  • 1/2 stick leek
  • 1 piece of celery
  • 1-2 carrots
  • 2 laurel leaves
  • 2-3 pimento grains
  • 6-8 peppercorns
  • 1 unpeeled onion (for the nice color)

Put it on, let it boil up for a while and then cook it gently until a leg loosens easily from the chicken (you can test it with the meat fork without taking the chicken out).

Set the chicken aside, pour the broth through a sieve and possibly degrease.


Now remove some broth and use it for a ragout or fricassee (because you do not need all the meat for the soup).

Broth with

  • fine carrot stripes
  • bamboo shoots
  • Lauchringen
  • 1 finely chili pepper (about 10g)
  • 1 grated piece of fresh ginger (about 20g)
  • 1 tbsp fresh, cut coriander leaves
  • 1-2 stalks of lemongrass (whipped with meat tenderizer)

Simmer salt again for 15-20 minutes, remove lemongrass.

Add any quantity of the meanwhile detached, chopped chicken meat and cooked glass noodles, quantity also as desired (alternatively also shirataki or vermicelli) and season with naturally fermented soy sauce.

Brings sick and healthy people to sweat and tastes spicy and delicious!
