Pizza Fritta - deep fried pizza

This pizza is fried in vegetable oil before being grilled in the oven - these small dough pieces are crispy on the outside and soft and elastic on the inside. This is a little different than those cookies that I got from my oven. My oven just does not get hot enough (according to a pizzeria owner).

Here is the successful version:

The dough:
1 kg of flour (405/505)
1 grated EL salt
2 pck of dry yeast per 7 g
1 tablespoon of sugar
4 tablespoons olive oil
650 ml of lukewarm water


Dissolve the yeast beforehand in the water / oil / sugar - wait a moment and then mix with the flour / salt and knead well.

Here you can really feel what it means to work with the hands while cooking food. Just kneading is fun and appetite for what comes out.

If the dough is too sticky, just add flour until it has become a nice soft supple clop.


Cover it with a damp cloth and let it stand for one hour in a warm place - preferably in a large bowl, because the dough doubles its volume.

During this time, I prepare the ingredients for the topping:
z. Serrano ham, white beans, tuna, tomatoes (sliced), mushrooms, of course, the tomato sauce, cheese or whatever you like on your pizza.

An hour over?


The dough is now beating (beaten), so the air comes out ... and knead again.

I take small pieces of dough and process them into small flatbreads. This has the advantage that you can create different small pizzas.

Each flat is as thick as a coin - about - a bit thicker, too. I've tried it myself, because I have no rolling pin and do it with my hands (always keep flour ready, then it works great).

Heat oil in a deep pan. Quite hot. A wooden spoon helps to prove. If it's hot enough, bubbles are created. Should be 3 cm high. Because the dough patties slide into it. always away from the body if it injects.

So all dough pieces are deep fried gradually. The finished always on a household cloth drain.

Heat the oven to grill function properly, highest temperature.

Lay out the baking sheet with parchment paper, put the pizza toppings on it and top up. In addition I get my sweets in the kitchen and everyone may show as they like it. That was fun for everyone, including the big guests.

The pizzas are baked in the oven under the grill for about 5 minutes. FINISHED!

There were still some left over with us (without covering). I refreshed the next morning in the toaster. My daughter then lubricated Nutella on it. Also a possibility, but it should have been delicious ...
