Quick apricot almond pralines

A good beginner's recipe for anyone who ever wanted to make chocolates and / or give away homemade chocolates, but who always thought it was terribly complicated and therefore shied away from it.

Add 200 g of dried apricots and 3 tablespoons of apple juice (or peach or mango nectar) or apricot spirit to a mixing bowl and puree it. Then knead 50 g of grated almonds, the mass still feels very sticky, a bit more quiet.

I sometimes add a little extra honey, because I find some dried apricots are far less sweet than others. So, rather of the "dough" nibble and taste.


Now form small balls out of the mass and put them on a kitchen board or similar. provide. Anyone who wants to can roll the balls in grated almonds, but is not a must.

Now couverture (depending on your taste white, whole milk or bittersweet) in a high, not too wide vessel in a water bath or microwave melt.

One spit with a toothpick (or who has a roulade needle), once fully immerse in the couverture, drain briefly (while turning a bit) and then put on the board. If the small hole created by the toothpick does not fill up with the couverture on its own, take a drop of couverture with a second toothpick to cover the hole.


Who the whole with sprinkles or similar wants to decorate, it should sprinkle now, because the couverture is fast. Now repeat with the remaining balls in the same way.

If the couverture becomes too thick, reheat briefly in a water bath.

Since it can happen that the chocolates really stick to the ground, you should take a perfectly straight surface instead of a plate (which often has curved edges). Then you can simply cut the chocolates with a sharp kitchen knife with a thin blade from the ground "without damaging them.


The chocolates stay in the fridge for about a week.
