Snow from the Matterhorn
Today we will have a very exclusive starter: "Matterhorn Snow" - so called by one of the best cooks ever.
We make a home-made mashed potatoes (I assume everyone can!)
We give this K. puree in the middle of a plate and shape it as a small mountain. On top we add a tablespoon of unseasoned whipped cream. On this whipped cream we give about 25/30 g Beluga caviar. Freshly chopped parsley all around the plate. And already a fine appetizer is ready! If the Beluga is too expensive, you can also take salmon caviar or trout caviar (only please no German caviar substitute) then it is no longer the original recipe and should be named differently!
