Steak teriyaki with pak choi and green asparagus

For this uncomplicated delicious meal - steak teriyaki with pak choi and green asparagus - you cut rump steak into strips, and noodles also go well with the "steak" and with teriyaki sauce it also gets japanese.

The classic teriyaki sauce consists of only three ingredients, alternatively the finished sauces often contain rice vinegar, soy sauce, sugar / honey, garlic and ginger. Teriyaki sauce is ideal as a marinade for beef or poultry:

The meat gets a strong spiciness and is extremely tender (this may not seem like it at first glance as the dark sauce rubs off the meat).

  • 500 - 600 g rump steak
  • 2 red chili peppers
  • 150 ml of teriyaki sauce
  • 150 g of beef broth
  • 200 g of fresh mushrooms
  • 3 tablespoons of sesame, peanut or wok oil
  • 1 bunch of green asparagus
  • 1 tbsp butter
  • 2 (baby) Pak Choi
  • 1 teaspoon ground coriander
  • 1 tbsp fennel seeds (pounded)
  • Pasta (spaghetti or udon, Asian wheat noodles)
  • lemon pepper

preparation

  1. Cut the steak into thin pieces and cut the chili peppers into fine rings.
  2. Mix teriyaki sauce well with 3 tablespoons of oil (teriyaki sauce often contains oil, marinating may be slightly more).
  3. Pass the chili rings over the meat and leave for about 1 hour.
  4. Cook noodles according to package instructions.
  5. Wash Pak Coi, spin dry and cut in half.
  6. Clean mushrooms, slice.
  7. Peel the green asparagus only at the bottom (remove any woody ends), heat the butter in a pan and fry the asparagus first - remove from the pan, season with lemon pepper and keep warm.
  8. Fry the halved Pak Choi from both sides in the same fat, lightly salt, take out and finally simmer the mushrooms.
  9. Drain the marinated meat in a colander but catch the marinade.
  10. In another large pan (or wok) heat oil and brown the meat and the spices in it on high heat for about 2 minutes with stirring.
  11. Pour the collected marinade with the broth and add to the pan to the mushrooms, simmer for 3 minutes, add the cooked noodles, fold in and let on a small heat.
  12. To serve, add the steak meat to the noodles with Pac Choi and asparagus. Those who have not frozen asparagus after the asparagus season, alternatively resort to spring onions.
