Sweet and sour pickled carrots

If you like carrots, like me, you might like this tip! Very light preparation.

ingredients

  • about 400 g of carrots
  • 2 branches of rosemary, mint or who likes thyme
  • 100 ml of dry white wine
  • 100 ml of vinegar no matter which, only no essence)
  • 1 toe garlic
  • 1 tsp sugar
  • 3 tablespoons oil is best olive oil
  • salt and pepper

preparation

  1. Peel the carrots and cut into slices approx. 3 cm thick, slightly oblique.
  2. Wash all the herbs well and place in a saucepan with the carrots, wine, vinegar and a little more than 100 ml of water.
  3. Halve the garlic and add with the sugar and the oil.
  4. Cook the whole for about 15 minutes and season with salt and pepper.
  5. When everything has cooled down, put it in a jar (always use a large mason jar) and let it soak in the fridge for 2 days.
  6. The carrots still remain wonderfully crisp and taste really delicious as a side dish, I especially like to fried potatoes.
