White Bean Salad

Total preparation time: 1 hr.
A white bean salad - this is something delicious, not only for the warm season!
ingredients
- 1 big can of white beans
- Vinegar or fresh lemon juice
- 1 tsp salt
- 1/2 tsp pepper
- 1 pinch of sugar
- 4 tablespoons olive oil
- 1 gr. Red onion
- 1 gr. Meat tomato
- and a 1/2 bunch of parsley
So, now we can start!
preparation
- Drain the beans in a sieve, collecting about half of them. Stir in the vinegar or lemon juice, salt, pepper and sugar.
- Then mix in the olive oil and the beans and let them soak for at least 1 hour. Maybe spice something up, if you like it sharper. Then cut the peeled onion in half into thin strips.
- For the tomato, remove the stalk and cut the flesh into small cubes.
- Now chop the washed parsley roughly.
- Finally, arrange the white beans on a plate, then spread the onion, the diced tomatoes and the parsley. I garnish my salad with hard-boiled egg slices.
This recipe is for 4 people.
Since I no longer have so many starving roommates, I season the beans and take what I want to eat and keep them cool for the next day.
Since I often experiment, I've added to the diced tomatoes, simply peppercorns. SIMPLY SUPER DELICIOUS!
