ingredients
- 1 L cream
- 1 kg butter
- about 10 eggs (2 for the dough, spread the rest)
- 625 g of sugar
- about 2.5 kg of flour
- not quite 1 pck of cardamom
- 2 pk Succade (citron)
- A little salt
- Time, and a few helping hands have never done any harm ;-)
preparation
noon:
Beat 2 eggs in a large bowl.
Add yeast to a cup, add a little salt, and stir until the yeast is thin.
Add the yeast, the cream and 1 to 1.5 kg of flour to the bowl and stir.
Put the bowl in a warm place and let it ferment for 3-4 hours. Maybe cover with a cloth ...
Afternoon:
Add the remaining ingredients to the dough except for about 0.5 kg of flour.
Knead and let rest for 3-4 hours, but this time cool! (Basement, cellar)
In the evening:
Knead the dough and roll out a good inch thick, for which you will need the rest of the flour.
Cut the dough into 5 x 5 cm pieces, place on baking trays and brush with egg yolk.
Let stand overnight. (Basement, cellar)
In the morning:
Brush again with egg yolk and bake at about 225 degrees (in convection) about a quarter of an hour.
