Chocolate got too hot when melted?

If you melt chocolate (whether in the microwave or in a water bath), you should be careful that the chocolate is not too hot, otherwise it will lumpy.

If it has happened, and it is not too bad with the lumps yet, you can do the following:

- Let the chocolate cool down a bit and stir it a lot, the lumps are often smaller again
- then pass the chocolate through a sieve, provided that in the "product" that you wish to produce, lumps would not be nice, e.g. in glazes or creams.
