Elderflower jelly

Elderflower jelly - refreshing and fruity taste.
In the north, the first elder trees are blooming - in the south, they probably do it longer. That's why this tip fits just fine.
For the elderflower jelly you need:

- 200 g elderflower (weighed dry, with as few stems as possible)
- 1 liter of apple juice
- 1 packet of citric acid (Dr. Oetker, for example)
- 1 kg gelling sugar 3: 1
preparation
- The flowers are rinsed gently and then placed in the apple juice for 24 hours. (Press the flowers down a bit so that they are completely covered by the juice.)
- The next day, pour the liquid through a cloth into a saucepan and add the citric acid.
- Then add the jelly sugar and bring the juice to a boil. Cook according to the instructions on the package, that is 4 minutes for the gelling sugar that I know.
- Then put the hot liquid in hot-rinsed screw-cap jars. Turn the sealed jars upside down for 5 minutes, then turn them back upside down.
