Fresh Sicilian tomato pesto

  • 500 g of fresh tomatoes (preferably aromatic, such as egg or date tomatoes)
  • 100 g of Parmesan
  • a handful of fresh basil
  • 100 g ricotta or alternatively cream cheese
  • Pine or alternatively almond kernels
  • 1 - 2 glasses of olive oil
  • Salt, pepper, sugar

preparation

Halve the tomatoes and remove the core casing, puree with the other ingredients until it is a creamy mass. So eliminates the annoying tomato skinning, because the skin really disappears completely.

Salt, pepper or season with Parmesan and the whole thing now on the noodles, stir well and ready.
