Roast pork in a roasting tube / foil tube - on a savoy cabbage

Ingredients for about 10 people

In the film tube / Bratschlauch you can wonderfully prepare a larger amount of meat, it always succeeds and is super delicate and above all: The oven stays clean.

  • Take a nice neck roast of more than 2.5 kg and let it be triggered by the friendly butcher of the bones

Prepare marinade

  • 2-3 tbsp medium hot mustard
  • about 1 tablespoon tomato ketchup
  • 1-2 pressed garlic cloves
  • 1 splash of lemon
  • 1 more splash of cognac
  • about 2 tablespoons barbecue seasoning (I take barbecue from the market traders) or you can z. B. also take Gyros spice

preparation

  1. Salt the meat well and coat with the "cream" or marinade.
  2. Now put the meat in the foil tube (there are extra widths of Toppits).
  3. Add 1 tbsp of water or cognac. If you like, you can add a few onions. Seam of the tube upwards.
  4. Close both sides well with the attached film strip and, according to instructions, place on the wire rack in the cold oven and cook at 200 ° C for one hour, then reduce to 180 ° C and cook for another hour.
  5. The meat can be left with the oven off for a little longer, which does not hurt.
  6. Then take the foil out of the oven at both ends, hold it over a bowl and carefully cut it in at the bottom and catch the gravy, you can process it as usual to a delicious sauce.
  7. Place the meat in a correspondingly large aluminum foil and let rest for about half an hour. It is now butter tender.

Savoy bed

  1. Cut a 1/2 savoy cabbage into small pieces, blanch briefly or, as I like to do, simply put the washed leaves in the microwave for 2 minutes.
  2. Sauté the onion and lean bacon in a large roasting pan with oil, add the savoy cabbage, season with cumin, a little salt, pepper and a little paprika powder.
  3. Add about 1/2 cup of broth and cook for about 10 minutes, turning now and then. The vegetables may still have something "bite".
  4. Finally, put the sliced ​​neck roast on it and serve.
