Cauliflower with cheese sauce - step by step

Many of us will still remember childhood days when meat was only available on Sundays. A favorite meal of my childhood in the sixties was cauliflower with cheese sauce - and boiled potatoes, mashed and spiked with the sauce.
It is a simple meal but must be prepared with care. Spicy cauliflower and watery sauce do not taste good.
ingredients
- 1 large cauliflower
- 1 tsp salt
For the sauce
- 250 g of grated cheese, e.g. Gouda cheese
- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 liter of milk
- 1/2 teaspoon salt
- pepper from the grinder
preparation
First, make the sauce:
- The butter is melted in a saucepan, stirred in the flour and stirred for two minutes at low heat.
- Now the milk is heated in a second pot - be careful that it does not burn.
- The hot milk is then added slowly with stirring to the flour butter. Add only small quantities, stir in, stir until smooth and continue. Add salt and pepper.
- Grate the cheese and stir in the sauce.
