Vanilla pears with blackberry sauce

A delicious dessert, I can only recommend to anyone. Even without ice a dream!

ingredients

For the pears:

  • 6 pears
  • 1 vanilla bar
  • 1 untreated lemon
  • 200 gr. Sugar

For the sauce:

  • 500 g fresh or TK blackberries (always take TK)
  • 75 g of powdered sugar
  • 125 ml of red wine
  • 1 untreated orange
  • 2 tablespoons of kirsch (does not have to be, do not use it yourself, replace it with 2 tablespoons of orange juice)
  • Vanilla icecream

preparation

  1. The pears are peeled, halved and gutted.
  2. Slice the vanilla stick lengthwise, scrape out the marrow, then slice the washed lemon.
  3. Now boil the pears, the vanilla pulp and the lemons, with the sugar and another 500 ml of water and cook the pears for about 10 minutes and allow to cool in the liquid.
  4. For the sauce thawing blackberries.
  5. Caramelise the icing sugar in a pan, add the red wine and cook until the caramel is dissolved.
  6. Now add half of the blackberries and let them boil for about 6 minutes, then pass everything through a sieve and add remaining blackberries and bring to a boil again.
  7. Now wash the orange and thinly peel (but you should make sure that the whites of the orange is peeled away), cut into slices, then the orange slices are doused with boiling water, then drain well with the Kirschwasser (or orange juice) and some grated orange peel in the sauce and the sauce is cold.
  8. When serving, put the pear halves on the plate together with the ice cream and pour in the sauce, ready.

The sauce also tastes great when it's hot!
