Christmas baking: biscuit dough in stock

I like to bake cookies at Christmas time. It should always be fast with me. That's why I came up with the idea to prepare and freeze the cookie dough.
ingredients
The basic dough:
- 140 g of flour
- 50 g of powdered sugar
- 1 pinch of salt
- 1/2 tsp bourbon vanilla sugar
- 85 g of butter or margarine
- 1 egg yolk
With this basic dough you can make different cookie variations by adding different ingredients to it. Today I have made 4 varieties that I will freeze, then gradually baked them.
1. Cranberry Orange
Add-ons:
- 40 g of dried cranberries
- 2 tsp orange peel
2. Almond pistachio
Add-ons:
- 30 g of chopped pistachios
- 1/2 teaspoon almond flavor
- If you want to cover the cookies, then you also need chopped pistachios
3. Chocolate gingerbread
Add-ons:
- 30 g baking cocoa
- 1 teaspoon gingerbread spice
- 1/2 teaspoon almond flavor
- to wrap 1-2 tbsp of chocolate greens
4. Vanilla shower
Add-ons:
- 2 sachets of effervescent powder
- 1 sachet of Bourbon vanilla sugar
The creativity is really limitless.
preparation
- Put flour, powdered sugar, vanilla sugar and salt in a mixing bowl and mix.
- Add the butter or margarine in small pieces and use a hand mixer or food processor to make a crumbly dough.
- Now add the egg yolk and knead briefly.
- Add the variable ingredients, depending on the variant, and incorporate them briefly.
- Form a roll from this dough and place in the refrigerator for at least 2 hours or freeze.
- For baking simply cut the roll into 0.5 cm thick slices (first thaw the frozen ones) and place on a baking tray covered with baking paper. (I pressed the cookies a bit flat, but you do not have to).
- Bake for 12 - 15 minutes at 180 °.
These cookies can be produced not only at Christmas time, but also throughout the year.
