Green bean stew - green beans as before

Now is harvest time for green beans. I have good memories of my mother's green bean stew. She basically cooked him with mutton. But where do you get it today? I tried it with lamb fillet. It works, but tastes different than before.

You have to cook fresh beans for a long time to soften them. I have added thyme, of course you can also use savory or oregano.

I cut the lamb fillet into slices about 2 cm thick, then fried in a not very hot pan from both sides for about 5 minutes. Then I cut the slices in about 1x1x1 cm large cubes and done with the dripping into the bean soup. Then potatoes are added. I still try how to mimic the mutton taste. So far, unfortunately, I have found no concrete indication. Although I suspect that it has to do with the hormone balance of young sheep. So try it. I tend to cinnamon and cumin or cumin.

So, we ate it. But for the sake of my wife, I have to take beef next time.
