Christmas brown gingerbread, pepper nuts

I remember the time when our mother and I children baked pepper nuts for Christmas. Of course we also had bought cookies. The taste of these bought cookies I can not remember today with the best will. But I can still recall the smell and taste of my mother's pepper nuts today. I do not even have to close my eyes for that. So if you want your kids to remember you, go! Bake with them pepper nuts. That's fun, even if you do not have kids yet, or when the July sun laughs.

For that you need:

  • 1 kg of flour
  • 375 g of sugar
  • 375 g of butter
  • 125 g of lard
  • 1 cup of dark syrup
  • 10 g potash
  • 1 sachet of gingerbread spice
  • 100 g of citron

preparation

All ingredients are available in the supermarket.

The lemon is finely chopped. This can also be done with a food processor. But please do not crush to flour!


The potash is dissolved in a little water, in a cup.

Butter and lard should be at room temperature.

Now all ingredients are put in a bowl and stirred well. This is also possible with a dough hook and with support from the socket.


If the dough is nicely smooth, it has to rest for 2 days! This is important!
Just leave it in the bowl and cover it with a kitchen towel.
After the rest of the dough on a floured worktop, rolled out nicely flat and gouged out with molds. Who does not have a role, takes the wine bottle from the last binge. If you do not have any molds, you can also cut out small figures with the knife or simply cut a checkerboard pattern into the dough.

A baking sheet is now laid out with baking paper and filled with the cookies. Now put it in the oven on the bottom rail at about 160-180 ° C.

Bake the cookies only briefly (about 15 minutes) and do not let them burn! The dough should still be a little soft. It does not matter if you bake too many cookies. They last up to 6 months and still taste good when they are rock hard.
