This tip is about how you can peel and cut ginger thinly:
Ginger can be peeled in many ways, but usually you dispose of too much of the shell. This happens, e.g. with a potato peeler or even when peeled with a kitchen knife.
The best method for me is the previous freezing, whereby I always keep my ginger supply in the freezer.
He keeps there unlimited and if necessary I always have fresh ginger at hand.
The frozen piece of ginger is scraped off with a small kitchen knife, whereby the shell dissolves wafer-thin.
The peeled ginger can now be cut into millimeter-thin slices or scraped, which is not possible with fresh ginger.
